Meet Reza, a passionate coffee farmer nestled in the picturesque Jlegong Village, cradled by the majestic Mount Temanggung in Central Java, Indonesia. With the earth beneath his feet, Reza embodies the spirit of a dedicated cultivator who has made it his life's mission to craft the perfect cup of coffee.
The processing has been applied in the most masterful way. We think the way Reza treats his Canephora is special. He doesn't try to dress it like something it’s not, not that there would be anything wrong with that. For us, Rezas processing is about subtle nuances. It very skillfully combines base flavors with new exciting twists that elevate it. What he did here is take a Honey process, a very common way to process Canephora in Indonesia, and brought it further with through yeast inoculation and hydro sequences that combined imprinted flavor characteristic of both honey and washed processing creating these beautiful notes of jasmine and strawberry on top of the more expected base of brown sugar and black tea in a very balanced setting with a lot of flavor transparency.
His processing work is elegant and very Reza. The way he does it, you can tell that it is done by someone who knows their crop incredibly well and has great understanding of what happens when it is roasted and brewed. It is incredibly unique for its time and we are not aware of anyone else currently producing such flavor profiles. It is pioneer work and such an unbelievable honor to work with it.
